Zucchini has a reputation problem: too often it lands on the table watery, pale and apologetic. These fries are the fix. Cut into sticks, salted to draw out excess moisture, then coated in a Parmesan and panko crust, zucchini turns into something genuinely crunchy in the air fryer — the kind of snack that disappears from the plate while you are still cooking the second batch.

They work as a game-day snack with marinara for dunking, as a side next to burgers or grilled chicken, and — we say this from experience — as the thing that finally gets zucchini skeptics to ask for seconds. From cutting board to plate takes about twenty minutes, and almost all of it is waiting for the basket.

The salting step is not optional

Zucchini is mostly water, and water is the enemy of crunch. Tossing the sticks with salt and letting them sit for ten minutes, then patting them dry, pulls out a surprising amount of liquid. Skip it and the crust steams itself soft from the inside. It is the single difference between fries that crunch and fries that slump.

Getting the crust to stay on

Work in the classic three-station order — flour, egg, crumbs — and press the crumbs on gently with your fingers instead of just rolling the sticks through. A light spray of oil over the coated fries before they go into the basket helps the panko turn evenly golden and keeps the Parmesan from scorching in spots.

Ingredients

  • 2 medium zucchini (about 1 lb / 450 g)
  • 1 teaspoon kosher salt (6 g), for drawing out moisture
  • 1/2 cup all-purpose flour (60 g)
  • 2 large eggs, beaten
  • 3/4 cup panko breadcrumbs (45 g)
  • 1/3 cup finely grated Parmesan (30 g)
  • 1 teaspoon Italian seasoning (2 g)
  • 1/2 teaspoon garlic powder (1.5 g)
  • Olive oil spray
  • Warm marinara sauce, for serving

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Cut and salt the zucchini. Trim the ends and cut each zucchini into fry-shaped sticks about 3 inches long and 1/2 inch thick. Toss with the salt in a colander and leave for 10 minutes, then pat very dry with paper towels.
  2. Set up the coating stations. Put the flour in one shallow bowl, the beaten eggs in a second, and stir the panko, Parmesan, Italian seasoning and garlic powder together in a third.
  3. Coat the fries. Roll each stick in flour, dip in egg, then press into the crumb mixture until well coated. Set the coated fries on a plate in a single layer.
  4. Preheat and load. Heat the air fryer to 400°F (200°C). Spray the basket and the tops of the fries lightly with olive oil spray, then arrange the fries in a single layer with space between them — work in two batches.
  5. Air fry until crisp. Cook for 9 to 11 minutes, turning once halfway, until the crust is deep golden and crisp. Serve immediately with warm marinara.

Storage & reheating

Zucchini fries are best within minutes of cooking. Leftovers keep 2 days in the fridge and re-crisp reasonably well in the air fryer at 375°F (190°C) for 3 to 4 minutes, though they never quite match the first batch. We do not recommend freezing them after cooking.

Frequently asked questions

Can I make these gluten-free?

Yes — swap the flour for a 1:1 gluten-free blend and use gluten-free panko, which most large grocery stores now stock next to the regular breadcrumbs. The method and timing stay exactly the same.

Why did my coating fall off?

Usually the zucchini was still damp when it hit the flour, or the crumbs were rolled on instead of pressed. Dry sticks plus a gentle press at the crumb station fixes it.

What sauce goes best with zucchini fries?

Warm marinara is the classic, but garlic aioli, ranch, and a spicy yogurt dip all work beautifully. Anything cool and creamy against the hot, salty crust is a win.
