Fajita night usually means a pile of warm tortillas, and there is nothing wrong with that — but on the nights you want the same smoky, lime-bright flavour in a lighter bowl, this is the version to make. Strips of chicken get a proper fajita seasoning — smoked paprika, cumin, chilli powder and oregano — and cook hot and fast alongside bell peppers and onion until the edges char in spots. Everything piles over fluffy cauliflower rice with avocado, salsa and a squeeze of lime.

It belongs in our Healthy & Low-Carb collection alongside weeknight favourites like our Egg Roll in a Bowl, because it follows the same rule: keep the seasoning bold and the cooking fast, and nobody misses what was left out. One large skillet handles the chicken and vegetables, the cauliflower rice warms in the microwave or a second pan, and dinner is ready in about thirty minutes.

The bowls are built for real weeknights. The seasoning mix doubles well, the chicken and peppers reheat cleanly for meal prep, and everyone can top their own bowl — extra salsa and cheese for the kids, extra lime and hot sauce for the adults. Set out the toppings and let the table do the rest of the work.

Slice everything the same thickness

Even cooking is the whole secret to a good fajita pan. Slice the chicken across the grain into strips about 1/2 inch (1.3 cm) thick, and cut the peppers and onion to a similar width. Thin pieces cook in minutes and pick up char; thick, uneven pieces steam in their own juices and turn soft before they brown. If your chicken breasts are very thick, slice them in half horizontally first, then into strips — you will get more seasoned surface and a far better sear.

Hot pan, two batches, real char

A crowded skillet steams instead of sears, and steamed fajitas taste boiled. Heat the pan until the oil just shimmers, cook the chicken in a single layer, and leave it alone for the first two minutes so a crust can form. Work in two batches if your pan is smaller than 12 inches (30 cm). The peppers and onion need the same treatment — high heat, a little patience, and only an occasional stir — so their edges blacken in spots while the centres stay crisp-tender.

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts (680 g), sliced into strips
  • 2 tablespoons olive oil (30 ml), divided
  • 2 teaspoons smoked paprika (5 g)
  • 2 teaspoons ground cumin (5 g)
  • 1 teaspoon chilli powder (3 g)
  • 1 teaspoon garlic powder (3 g)
  • 1/2 teaspoon dried oregano (1 g)
  • 1 teaspoon kosher salt (6 g), divided
  • 1/2 teaspoon black pepper (1.5 g)
  • 3 bell peppers (450 g), mixed colours, sliced
  • 1 large yellow onion (200 g), sliced
  • 4 cups cauliflower rice (400 g), fresh or frozen
  • 1 tablespoon lime juice (15 ml), plus wedges to serve
  • 1 avocado (150 g), sliced, to serve
  • 1/2 cup salsa (120 g), to serve

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Season the chicken. Pat the chicken strips dry with paper towels — dry chicken browns, wet chicken steams. Toss with 1 tablespoon of the olive oil, the smoked paprika, cumin, chilli powder, garlic powder, oregano, 3/4 teaspoon of the salt and the black pepper until every strip is evenly coated.
  2. Sear the chicken. Heat a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5 to 6 minutes, turning once, until deeply golden in spots and cooked through to 165°F (74°C). Transfer to a plate and tent loosely with foil.
  3. Char the peppers and onion. Add the remaining oil to the same pan. Add the peppers and onion with the remaining salt and cook over high heat for 5 to 6 minutes, stirring only occasionally, until softened with charred edges. Return the chicken and any juices to the pan, add the lime juice, and toss for 1 minute.
  4. Warm the cauliflower rice. While the peppers cook, heat the cauliflower rice in a covered skillet or microwave according to the package directions, 4 to 5 minutes, until hot and fluffy. Season lightly with salt. Fluff with a fork so it stays separate, not packed.
  5. Build the bowls. Divide the cauliflower rice between 4 bowls. Top with the chicken, peppers and onion, then finish with avocado slices, a spoonful of salsa and a lime wedge each. Serve straight away while the chicken is hot and the vegetables still have their char.

Storage & reheating

Cooked chicken and vegetables keep for up to 4 days in an airtight container in the refrigerator; store the cauliflower rice separately so it does not absorb their juices. Reheat in a hot skillet for 3 to 4 minutes to bring back some char, or microwave until steaming. Add avocado and salsa fresh at serving. The cooked chicken and peppers freeze for up to 2 months; thaw overnight in the refrigerator before reheating. Frequently asked questions

Can I use chicken thighs instead of breasts?

Yes, boneless skinless thighs are excellent here and stay juicier. Use the same weight, slice them the same thickness, and cook to 165°F (74°C) — they may need 1 extra minute because they render a little more fat into the pan. Drain any excess fat before adding the peppers so the vegetables char instead of frying.

What can I serve instead of cauliflower rice?

Regular rice, quinoa or shredded lettuce all work. A bed of chopped romaine keeps the bowl low-carb and adds crunch, while a scoop of black beans makes it more filling if carbs are not a concern for everyone at the table. Warm tortillas on the side turn the same pan into classic fajitas.

How do I make this spicier?

Add 1/2 teaspoon of chipotle powder or cayenne to the seasoning, or stir a sliced jalapeno in with the peppers. A drizzle of hot sauce or a spoonful of spicy salsa at the table lets each person set their own heat without changing the base recipe.

Can I meal prep these bowls?

Yes — this is one of the best meal-prep recipes on the site. Portion the rice, chicken and vegetables into 4 containers and refrigerate for up to 4 days. Keep avocado, salsa and lime separate and add them after reheating so they taste fresh.

Why did my peppers go soggy?

The pan was either crowded or not hot enough, so the vegetables steamed in their own liquid. Cook over high heat in a wide skillet, stir only occasionally, and salt the peppers after they have started to char — early salt draws out water before browning can happen.
