Shawarma is built on patience — meat turning slowly on a spit, shaved off in crisp-edged ribbons. These bowls borrow the part home cooks actually crave, the warm spice blend and the garlicky sauce, and rebuild the rest for a Tuesday night: chicken thighs marinated in cumin, paprika, turmeric and a whisper of cinnamon, seared hard in a skillet so the edges char the way spit-roasted edges do, then sliced and piled over cauliflower rice with crunchy vegetables.

Thighs are the right cut here and it is not close. They forgive a hot pan, stay juicy when sliced, and their richness stands up to a heavy hand with spice. The bowls sit in our Healthy & Low-Carb collection alongside recipes like Easy Low-Carb Stuffed Peppers, and they follow the same house rule: the low-carb base should be a deliberate, tasty part of the dish — seasoned cauliflower rice with lemon and parsley — never a sad substitute nobody mentions.

Give the chicken at least the 10 minutes it takes to heat the pan and make the sauce; an hour is better, and overnight is best of all. The spices need a little time against the salt and lemon to move past the surface. While the chicken rests after cooking, slice it against the grain so every piece carries both a charred edge and a juicy middle.

Char is a flavor, not a mistake

Shawarma's signature is the contrast between crisp, dark edges and tender meat, and a home skillet can get you most of the way there if you respect two rules. First, the pan must be properly hot before the chicken goes in — a drop of water should skitter and vanish. Second, do not crowd it: cook in two batches if your skillet is under 12 inches (30 cm), because crowded thighs steam in their own juices and never char. A thin slick of oil, chicken laid down and left alone for a full 4 minutes, is what builds the crust people pick at straight from the cutting board.

The garlic yogurt sauce does three jobs

That small bowl of Greek yogurt, lemon and grated garlic is the sauce, the salad dressing and the thing that cools the warm spices between bites. Make it while the chicken marinates so the garlic has time to mellow into the yogurt — freshly mixed, it tastes sharp and raw; after 20 minutes it tastes like the sauce from a good wrap shop. Keep it thick: if your yogurt is loose, stir in the lemon juice a teaspoon at a time. A sauce that runs off the spoon will waterlog the cauliflower rice instead of draping over the chicken.

Ingredients

  • 1 1/2 lb boneless skinless chicken thighs (680 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 3 garlic cloves, finely grated (about 9 g)
  • 2 teaspoons ground cumin (4 g)
  • 2 teaspoons paprika (4 g)
  • 1 teaspoon ground turmeric (3 g)
  • 1 teaspoon kosher salt (6 g)
  • 1/2 teaspoon black pepper (1.5 g)
  • 1/4 teaspoon ground cinnamon (0.5 g)
  • 4 cups cauliflower rice (400 g), fresh or frozen
  • 3/4 cup plain Greek yogurt (170 g)
  • 1 tablespoon lemon juice (15 ml), for the sauce
  • 1 garlic clove, finely grated (about 3 g), for the sauce
  • 2 cups chopped romaine lettuce (120 g)
  • 1 cup cherry tomatoes (150 g), halved
  • 1/2 English cucumber (about 120 g), diced
  • 1/4 cup thinly sliced red onion (30 g)
  • 2 tablespoons chopped fresh parsley (8 g)

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Marinate the chicken. Stir the olive oil, lemon juice, grated garlic, cumin, paprika, turmeric, salt, pepper and cinnamon into a paste in a large bowl. Add the chicken thighs and turn them until every surface is coated in the spice paste. Set aside for at least 10 minutes at room temperature, or cover and refrigerate for up to 24 hours.
  2. Make the garlic yogurt sauce. Whisk the Greek yogurt, lemon juice, grated garlic and a pinch of salt in a small bowl. Set it aside for at least 15 minutes so the garlic mellows, then taste — it should be bright and garlicky without tasting raw. Refrigerate until serving.
  3. Sear the chicken. Heat a large skillet over medium-high heat until a drop of water skitters across it. Add the chicken in one layer, working in two batches if needed, and cook undisturbed for 4 to 5 minutes until the undersides are deeply charred at the edges. Turn and cook 3 to 4 minutes more, until the thickest piece reaches 165°F (74°C).
  4. Rest and slice. Move the chicken to a cutting board and rest it for 5 minutes — slicing early spills the juices you worked to keep. Slice the thighs against the grain into strips about 1/2 inch (1.25 cm) wide, so each piece keeps a charred edge.
  5. Cook the cauliflower rice. While the chicken rests, add the cauliflower rice to the same skillet — do not wipe it out; the fond and spice oil left behind are free seasoning. Cook for 4 to 5 minutes, stirring now and then, until tender with a little texture left. Season with a pinch of salt and half the parsley.
  6. Build the bowls. Divide the cauliflower rice between four bowls. Arrange the sliced chicken, romaine, tomatoes, cucumber and red onion in sections over the top. Spoon the garlic yogurt sauce generously over the chicken, scatter the remaining parsley, and serve with lemon wedges if you have them.

Storage & reheating

Store the components separately for the best leftovers: the sliced chicken and cauliflower rice keep for up to 3 days in the refrigerator, the sauce for up to 4 days, and the chopped vegetables for 1 to 2 days. Reheat the chicken and cauliflower rice in a skillet over medium heat until steaming, then build fresh bowls with cold vegetables and sauce. The cooked chicken freezes well for up to 2 months; thaw it overnight in the refrigerator. Raw marinated chicken can also be frozen in its marinade for up to 2 months — thaw, then cook as directed. Frequently asked questions

Can I use chicken breast instead of thighs?

Yes. Breasts are leaner and cook faster, so watch them closely and pull them at 165°F (74°C) — even 5 degrees over and they turn dry against the bold spices. Pounding them to an even 3/4 inch (2 cm) thickness first helps them char and cook at the same rate. The flavor will be a little lighter; an extra spoonful of sauce fixes that.

Can I cook the chicken in the air fryer or oven?

Both work. Air fry at 400°F (200°C) for 12 to 14 minutes, turning halfway, until charred at the edges and 165°F (74°C) inside. In the oven, roast on a sheet pan at 425°F (220°C) for 18 to 22 minutes. The skillet still gives the deepest char, but the air fryer is a close second and frees your hands for the bowls.

What if I do not like cauliflower rice?

Serve the chicken over chopped romaine for a shawarma salad, over regular rice or warm flatbread for anyone not eating low-carb, or over a bed of roasted zucchini and peppers. The spice paste and sauce carry the dish; the base is there to catch them, so choose the one your table will actually eat.

How far ahead can I marinate the chicken?

Up to 24 hours in the refrigerator. The lemon juice in the marinade starts to firm up the surface of the meat after about a day, so longer marinating trades juiciness for a slightly chalky texture. If you need more lead time, freeze the chicken in the marinade and let it marinate as it thaws overnight in the fridge.

Is the cinnamon noticeable?

It should not read as cinnamon at all. A quarter-teaspoon across a pound and a half of chicken adds the warm, faintly sweet background that makes shawarma spice taste like shawarma instead of taco seasoning. If you are cautious, start with a pinch — you can always add more next time, and most people end up adding the full amount.
