Beef stroganoff has a reputation as company food — the kind of dish that needs an afternoon and a sink full of pans. This skillet version keeps everything people love about it, the tender strips of beef, the mushrooms, the tangy sour cream sauce clinging to egg noodles, and brings it down to one pan and about thirty-five minutes. It is weeknight cooking that tastes like a Sunday dinner, which is the best trick a recipe can pull.

It earns its place in our Easy Dinners collection alongside our Creamy Garlic Parmesan Pasta — both are built on the same idea of a real sauce made in the pan the main ingredient cooked in, so nothing flavourful is left behind. Here the noodles cook separately while the sauce comes together, then everything meets in the skillet for the final toss.

The one rule that protects this dish: keep the sour cream off a hard boil. Stirred in at the end, off the fiercest heat, it makes a sauce that is glossy and smooth. Boiled, it can split and turn grainy, and no amount of stirring brings it back. Warm the sour cream to room temperature while the beef cooks and add it at the very end — the sauce will thank you with a perfect finish every time.

Sear the beef in batches, slice it thin

Thin slices across the grain are what make stroganoff beef tender in minutes instead of hours. Slice a partially firmed-up steak — twenty minutes in the freezer makes this easy — into strips about 1/4 inch (6 mm) thick. Then sear in two batches over high heat, about ninety seconds a side, and take the beef out while it is still a shade underdone. Crowded beef steams grey; batched beef browns, and it finishes gently when it returns to the warm sauce.

Brown the mushrooms properly

Mushrooms need the same patience as the beef. Add them to the pan in a single layer and leave them alone for the first three minutes, so the side touching the pan turns deep golden. Stirring too early keeps them moving through their own released liquid and they steam pale and soft. Golden mushrooms bring the savoury depth that makes a quick stroganoff taste slow-cooked, so this step is worth every second it takes.

Ingredients

  • 1 lb beef sirloin (450 g), sliced thin across the grain
  • 1 teaspoon kosher salt (6 g), divided
  • 1/2 teaspoon black pepper (1.5 g)
  • 2 tablespoons olive oil (30 ml), divided
  • 8 oz cremini mushrooms (225 g), sliced
  • 1 medium yellow onion (150 g), finely diced
  • 3 cloves garlic (15 g), minced
  • 2 tablespoons all-purpose flour (16 g)
  • 2 cups beef broth (480 ml)
  • 1 tablespoon Worcestershire sauce (15 ml)
  • 1 teaspoon Dijon mustard (5 g)
  • 8 oz egg noodles (225 g)
  • 3/4 cup sour cream (180 g), at room temperature
  • 2 tablespoons chopped fresh parsley (8 g)

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Cook the noodles. Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions until just tender. Drain, reserving 1/2 cup (120 ml) of the cooking water, and set aside. Room temperature is fine — they will warm through in the sauce.
  2. Sear the beef. Season the beef with half the salt and the pepper. Heat 1 tablespoon of the oil in a large skillet over high heat. Sear the beef in two batches for about 90 seconds per side until browned but still slightly pink inside. Transfer to a plate with any juices.
  3. Brown the mushrooms and onion. Add the remaining oil to the same pan over medium-high heat. Cook the mushrooms in a single layer for 4 to 5 minutes until deep golden. Add the onion and cook for 3 minutes more, then stir in the garlic for 30 seconds.
  4. Build the sauce. Sprinkle the flour over the vegetables and stir for 1 minute. Pour in the beef broth gradually, stirring to avoid lumps, then add the Worcestershire sauce, mustard and remaining salt. Simmer for 4 to 5 minutes until the sauce thickens enough to coat a spoon.
  5. Finish with sour cream. Reduce the heat to low. Stir a spoonful of the hot sauce into the sour cream to warm it, then stir the sour cream into the pan. Return the beef and its juices, add the noodles, and toss gently for 1 to 2 minutes until everything is hot and glossy — do not let it boil. Loosen with reserved noodle water if needed, scatter with parsley and serve.

Storage & reheating

Leftover stroganoff keeps for up to 3 days in an airtight container in the refrigerator. Reheat gently in a covered skillet over low heat with a splash of broth or milk, stirring often — hard boiling can split the sour cream sauce even on reheating. The noodles absorb sauce as they sit, so expect a thicker result the next day. Freezing is not recommended because the sour cream sauce separates on thawing. Frequently asked questions

What is the best cut of beef for stroganoff?

Sirloin is the weeknight sweet spot — flavourful, tender when sliced thin across the grain, and reasonably priced. Ribeye and tenderloin are richer splurges, and flank steak works if sliced very thin against the grain. Avoid stewing cuts like chuck in this quick version; they need long, slow cooking to become tender.

Can I use ground beef instead?

Yes — that makes the well-loved ground beef stroganoff. Brown 1 lb (450 g) of ground beef, breaking it into small crumbles and draining excess fat, then follow the recipe from the mushrooms onward. Cook ground beef through to 160°F (71°C). The texture is different but the sauce is the same, and kids often prefer it.

How do I stop the sour cream from curdling?

Three things: use full-fat sour cream, let it come to room temperature, and temper it with a spoonful of hot sauce before stirring it in. Most importantly, add it over low heat at the very end and never let the finished dish reach a boil — a gentle simmer is the limit.

What can I serve with stroganoff besides noodles?

Mashed potatoes are the classic alternative and soak up the sauce beautifully. It is also excellent over rice, buttered cauliflower rice for a lighter plate, or thick slices of toasted bread. A simple green salad or steamed green beans on the side balances the richness.

Can I make this without mushrooms?

Yes. Replace them with an extra onion sliced into wedges and browned the same way, or with sliced bell peppers added after the onion. The sauce loses a little savoury depth without mushrooms, so add an extra teaspoon of Worcestershire sauce to compensate.
