Enchiladas are a weeknight problem disguised as a dinner: the flavor is exactly what everybody wants, but rolling a dozen filled tortillas on a Tuesday is more project than most of us signed up for. This casserole keeps everything that matters — shredded chicken, a creamy green chile sauce, corn tortillas that soak up the sauce as they bake, and a properly bubbling cheese top — and replaces the rolling with simple layers, lasagna-style.

It belongs on the same reliable shelf as the rest of our Easy Dinners, and it uses the same shortcut logic as our Easy Chicken Pot Pie Casserole: a cooked chicken from the store, a sauce that comes together in one bowl, and a dish that feeds six people with leftovers that reheat like a dream. Fifteen minutes of assembly, thirty in the oven.

The sauce is the part worth understanding. Sour cream stirred straight into hot sauce can curdle and turn grainy, so it is whisked into the enchilada sauce off the heat, along with a little chicken broth to loosen it. The mixture bakes into something that tastes like a proper cream sauce — tangy, gently spicy, rich — without anyone standing over a saucepan. A few minutes of rest after baking lets the layers set so the casserole slices instead of slumping.

Rotisserie chicken is the right shortcut here

This casserole needs about three cups of shredded chicken, which is almost exactly one standard rotisserie chicken with the skin removed. It is already seasoned, already tender, and it shreds in minutes. If you would rather cook your own, poach or bake 1 1/2 lb (680 g) of chicken breasts or thighs until they reach 165°F (74°C) and shred them while warm — warm chicken pulls into strands far more easily than cold. Either way, mix a spoonful of the sauce through the shredded chicken before layering so every bite is seasoned, not just the sauced edges.

Corn tortillas hold their layer, flour tortillas do not

Flour tortillas turn soft and gummy in a baked, sauced casserole; corn tortillas soften too, but they keep a distinct, pleasant chew and their flavor stands up to the green chile sauce. Warm them briefly before layering — 20 seconds in a dry skillet or a quick pass over a burner — so they bend into the dish without cracking. Cutting some in half gives you straight edges for the sides of the dish, so the layers reach every corner instead of leaving saucy gaps.

Ingredients

  • 3 cups shredded cooked chicken (about 420 g), from 1 rotisserie chicken or 1 1/2 lb cooked chicken
  • 1 (15 oz) can green enchilada sauce (425 g)
  • 1 cup sour cream (240 g)
  • 1/4 cup low-sodium chicken broth (60 ml)
  • 1 (4 oz) can diced green chiles (113 g), undrained
  • 1 teaspoon ground cumin (2 g)
  • 1/2 teaspoon garlic powder (1.5 g)
  • 1/2 teaspoon kosher salt (3 g)
  • 12 corn tortillas (about 340 g)
  • 2 cups shredded Monterey Jack cheese (224 g)
  • 1 cup shredded cheddar cheese (112 g)
  • 1/4 cup sliced green onions (25 g), to serve
  • Chopped fresh cilantro and extra sour cream, to serve

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Heat the oven and mix the sauce. Heat the oven to 375°F (191°C) and lightly grease a 9x13 inch (23x33 cm) baking dish. In a large bowl, whisk the green enchilada sauce, sour cream, chicken broth, diced green chiles with their liquid, cumin, garlic powder and salt until smooth. Stir the shredded chicken into about 1 cup (240 ml) of the sauce so it is well coated.
  2. Warm the tortillas. Warm the corn tortillas in a dry skillet over medium heat for about 20 seconds per side, until pliable, and keep them wrapped in a clean towel. Cold corn tortillas crack when layered; warm ones lie flat and soak up sauce evenly.
  3. Lay the first layers. Spread 1/2 cup (120 ml) of the plain sauce over the bottom of the dish. Arrange 4 tortillas over it, halving some to cover the corners. Spoon over half the chicken mixture, drizzle with about 3/4 cup (180 ml) of sauce, and scatter 1 cup (112 g) of the combined cheeses.
  4. Repeat and top. Repeat with 4 more tortillas, the remaining chicken, another drizzle of sauce and 1 cup of cheese. Finish with the last 4 tortillas, all the remaining sauce spread right to the edges, and the remaining cheese. Covering the top tortillas completely with sauce keeps them tender instead of crisping into chips.
  5. Bake until bubbling. Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and bake for 10 minutes more, until the cheese is melted and golden in spots and the sauce is bubbling up around the edges. The center should read at least 165°F (74°C).
  6. Rest and serve. Rest for 10 minutes before cutting — this is what lets the layers set into clean slices. Scatter with green onions and cilantro and serve with extra sour cream at the table.

Storage & reheating

Leftovers keep for up to 4 days in an airtight container in the refrigerator and reheat beautifully — cover portions and warm in a 350°F (177°C) oven for about 15 minutes, or microwave in 1-minute bursts until steaming. The assembled, unbaked casserole can be covered and refrigerated for up to 24 hours; add 10 minutes to the covered baking time when it goes into the oven cold. Baked portions freeze for up to 2 months; thaw overnight in the fridge before reheating. Nutrition figures are estimates from standard ingredient data and vary with brands and substitutions.

Frequently asked questions

Can I use red enchilada sauce instead of green?

Yes. Red sauce gives a deeper, earthier casserole and pairs especially well with the cheddar. The method is identical. Because red sauces vary in heat more than green ones, taste yours first and adjust the salt — a very spicy sauce needs no other change, the sour cream will round it out in the oven.

How do I make it spicier, or milder?

For more heat, stir a diced jalapeno or a spoonful of chipotle in adobo into the sauce, or swap the Monterey Jack for pepper Jack. For a milder casserole, choose a mild green sauce, make sure your green chiles are labelled mild, and skip nothing else — the sour cream already softens the edges considerably.

Can I make this with flour tortillas?

You can, but expect a softer result. Flour tortillas absorb more sauce and lose their layer definition, so the casserole eats more like a creamy bake than distinct enchilada layers. If flour tortillas are what you have, use 8 large ones, do not warm them as long, and rest the finished casserole a full 15 minutes so it slices.

What can I add to stretch it further?

A cup of black beans (about 170 g, rinsed) layered with the chicken, or a cup of corn kernels (about 150 g), stretches the dish to feed eight without changing the method. A layer of sauteed peppers and onions works too. Keep total add-ins near 2 cups so the sauce still coats everything and the layers hold.

Can I use Greek yogurt instead of sour cream?

Yes, plain whole-milk Greek yogurt swaps in cup for cup and adds a little protein with a slightly tangier finish. Whisk it into the sauce off the heat exactly as written. Low-fat yogurt is more likely to turn grainy in the oven, so whole-milk is the safer choice here.
