Homemade meatballs have a reputation for being a weekend project — a frying pan of spattering oil, a tray going into the oven, a sink of dishes. The air fryer quietly retires all of that. These meatballs come out with a properly browned, almost crisp crust and a tender, juicy middle in about twelve minutes of cooking, and the only thing to wash is one basket and one bowl.
The mixture is the classic American-Italian one our kitchen trusts: beef and pork together for flavor and tenderness, fresh breadcrumbs soaked in milk so the centers stay soft, Parmesan and garlic for seasoning all the way through. It is the same dependable base we use under the sauce in our Creamy Tomato Tortellini Soup nights — roll them small for soup, standard size for everything else.
Serve them over spaghetti with marinara, tucked into rolls with melted mozzarella, or straight from the basket with toothpicks and a bowl of sauce for dipping. Like our Air Fryer Garlic Parmesan Wings, they are game-day food that happens to be easy enough for a Tuesday.
A panade keeps them tender
The least-known meatball ingredient is also the most important: a panade — breadcrumbs soaked in milk into a paste before they meet the meat. The starches in the bread hold onto moisture as the meatballs cook and physically keep the meat proteins from squeezing tight and tough. Skip it and even a fatty mix can cook up bouncy and dry. Give the crumbs five full minutes in the milk; the paste should look like thick porridge before it goes in.
Same size, same finish time
Meatballs cook by thickness, so a batch of mixed sizes is a batch where the small ones dry out waiting for the large ones. A small cookie scoop (about 1 1/2 tablespoons) portions them evenly without any weighing, and a quick roll between damp palms makes them round. Damp hands matter — the mixture is sticky by design, and wet palms keep it on the meatball instead of on you.

- 1/2 lb ground pork (225 g)

- 1 large egg
- 2 garlic cloves, finely minced (about 6 g)
- 2 tablespoons finely chopped fresh parsley (8 g)

Step-by-step instructions
- Make the panade. Stir the breadcrumbs and milk together in a large bowl and let them sit for 5 minutes, until the crumbs have absorbed the milk and formed a thick, soft paste. This paste is what keeps the finished meatballs tender, so do not rush past it.
- Mix gently. Add the beef, pork, Parmesan, egg, garlic, parsley, salt, pepper and Italian seasoning to the bowl. Mix with your hands or a fork just until everything is evenly combined and no streaks of panade remain. Overmixing works the meat into a dense, sausage-like texture — stop as soon as it comes together.
- Roll the meatballs. With damp hands or a small scoop, portion the mixture into 16 meatballs of about 1 1/2 tablespoons each, rolling them lightly into rounds. Set them on a plate as you go. If the mixture feels very soft, chill the rolled meatballs for 10 minutes — cold meatballs brown better.
- Preheat the air fryer. Heat the air fryer to 400°F (200°C) for 3 minutes. Lightly spray the basket with olive oil spray so the crusts release cleanly.
- Air fry in one layer. Arrange the meatballs in the basket in a single layer with a little space between each one, working in two batches if needed. Cook for 10 to 12 minutes, shaking the basket or turning the meatballs halfway, until deeply browned all over and the centers read 160°F (71°C) on an instant-read thermometer.
- Serve. Rest the meatballs for 2 minutes — they finish gently and stay juicier for it. Serve over pasta with warm marinara and extra Parmesan, in rolls, or as they are with sauce for dipping.

Storage & reheating
Cooked meatballs keep for up to 4 days in an airtight container in the refrigerator, and reheat best in the air fryer at 375°F (190°C) for 4 to 5 minutes, which brings the crust back. They freeze exceptionally well: freeze cooked meatballs on a tray until solid, then bag them for up to 3 months and reheat from frozen in sauce on the stove or in the air fryer at 375°F (190°C) for 8 to 10 minutes.
