If game day or movie night needs a proper snack, this is the one we make on repeat: a big plate of golden tortilla chips, hot and crisp straight from the air fryer, next to a bowl of smooth, warm queso that stays silky for dipping. There is no pot of oil to heat, no splattering, and no soggy bag from the store — just fresh chips with real crunch and a cheese sauce that takes minutes on the stove.

Set the bowl in the middle of the table with Easy Restaurant-Style Salsa and Easy Homemade Guacamole alongside and you have the full trio everyone hovers around. The chips are deliberately sturdy — cut thick, seasoned while hot, and crisped in small batches — so they scoop up a generous load of queso without snapping, while the salsa and guacamole keep every other bite bright and fresh.

The method is simple, but two details matter. A light coat of oil helps the seasoning cling and encourages even browning, and the chips must cook in a single layer so the hot air can reach every edge. The queso follows the same less-is-more logic: a quick butter-and-flour base, milk whisked in slowly, then cheese melted in off a rolling boil so the sauce stays glossy instead of grainy. Start to finish, you are dipping in about 25 minutes.

Cook in single-layer batches

Your air fryer basket decides the batch size, and respecting it is the whole secret. The triangles should sit in one flat layer with just a little space between them — a slight overlap at the corners is fine, but a stacked pile traps steam and steams instead of crisps. Work through the tortillas in three or four quick batches, shaking the basket once halfway through each one. Each batch takes only minutes, and because the fryer is already hot, the later batches often finish a touch faster than the first, so watch the final batch closely.

Keeping chips crisp until serving

Fresh chips lose their crunch when they sit in their own steam, so tip each finished batch onto a wire rack or a paper towel-lined tray in a single layer rather than piling them into a bowl while you work. If you are cooking for a crowd, hold the finished batches in a low oven at 200°F (93°C) while the last batch crisps — they will stay warm and shattering-crisp for up to half an hour, ready the moment the queso comes off the stove.

Ingredients

  • 12 corn tortillas (170 g)
  • 1 tablespoon avocado oil or neutral cooking oil (15 ml)
  • 1 teaspoon fine sea salt (6 g)
  • 1/2 teaspoon smoked paprika (1 g)
  • 1/2 teaspoon garlic powder (1.5 g)
  • 1 tablespoon unsalted butter (14 g)
  • 1 tablespoon all-purpose flour (8 g)
  • 1 cup whole milk (240 ml)
  • 2 cups shredded sharp cheddar cheese (225 g)
  • 1 cup shredded Monterey Jack cheese (115 g)
  • 1 (4 oz) can diced green chiles (113 g), drained
  • 1/2 teaspoon ground cumin (1 g)
  • 1/4 teaspoon chili powder (0.5 g)
  • 2 tablespoons finely diced red onion (20 g), to serve
  • 2 tablespoons chopped fresh cilantro (4 g), to serve
  • 1 lime (about 60 g), cut into wedges, to serve

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Cut and season the tortillas. Stack the tortillas and cut each one into 6 wedges with a sharp knife or pizza wheel. Spread the wedges in a wide bowl, drizzle with the oil, and toss gently so every piece gets a light, even coat. Sprinkle over half the salt, the smoked paprika and the garlic powder and toss once more.
  2. Preheat the air fryer. Heat the air fryer to 350°F (177°C) for 3 minutes. A properly hot basket starts crisping the edges on contact and stops the first batch cooking pale and leathery while the machine warms up around it.
  3. Air fry the first batch. Arrange a quarter of the wedges in a single layer in the basket, with a little space between pieces. Air fry at 350°F (177°C) for 4 minutes, then shake the basket well and cook for 3 to 4 minutes more, until the chips are golden at the edges, firm, and crisp when tapped. They firm up further as they cool.
  4. Finish the remaining batches. Tip the finished chips onto a rack and sprinkle lightly with the remaining salt while they are hot so it sticks. Repeat with the remaining wedges in two or three more batches, checking the last batch a minute early because a fully hot fryer cooks faster.
  5. Start the queso base. While the last chips cook, melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute, whisking constantly, until it smells faintly nutty. Slowly pour in the milk, whisking as you go so no lumps form, then cook for 2 to 3 minutes until the sauce thickens enough to coat a spoon.
  6. Melt the cheese. Turn the heat down to low and add the cheddar and Monterey Jack a handful at a time, whisking until each handful melts before adding the next. Stir in the green chiles, cumin and chili powder. If the queso seems thick, whisk in an extra splash of milk; it should pour slowly off a spoon in a smooth ribbon.
  7. Season, garnish and serve. Taste the queso and add salt if it needs it — the cheese brings plenty, so go gently. Pour it into a warm bowl, scatter the red onion and cilantro over the top, and serve right away with the chips piled on plates and in a basket, lime wedges alongside.

Storage & reheating

Store leftover chips in an airtight container or sealed bag at room temperature for up to 3 days. If they soften, refresh them in the air fryer at 350°F (177°C) for 1 to 2 minutes and let them cool for a minute — they crisp right back up. Leftover queso keeps, covered, in the refrigerator for up to 3 days; reheat it gently as described below rather than in the microwave, which can make it separate.

Frequently asked questions

Can I use flour tortillas instead of corn?

Yes, but expect a different chip. Flour tortillas puff in places and turn flaky and pale-gold rather than deeply crunchy, and they brown faster, so start checking at 5 minutes. Corn tortillas give the classic sturdy, toasty chip that holds up under a heavy scoop of queso, which is why they are our first choice here.

Why are my chips soggy or chewy?

Almost always crowding or moisture. A stacked basket traps steam, so cook in a truly single layer, and shake halfway so every edge meets the hot air. Chips also keep cooking as they cool — pull them when they are golden and just firm, tip them onto a rack, and give them two minutes before judging the crunch.

How do I reheat leftover queso without it splitting?

Reheat it low and slow. Put the queso in a small saucepan over the lowest heat with a splash of milk, about a tablespoon per cup, and whisk often until it is just warm and glossy again. High heat and boiling are what break cheese sauces, so patience matters more than speed.

What other seasonings work on the chips?

Plenty. Try chili-lime with lime zest and a pinch of sugar, taco seasoning, ranch seasoning, smoked paprika with a little brown sugar, or cinnamon sugar for a sweet batch to serve with fruit salsa. Whatever you choose, season the chips the moment a batch comes out, while the surface is still hot and oily, so the spices cling instead of falling off.

Can I make the chips and queso ahead?

The chips, yes — they keep their crunch for up to 3 days in an airtight container, and a 1-minute refresh in the air fryer makes them taste freshly made. The queso is best within the hour, but it can be made earlier the same day, refrigerated, and reheated gently with a splash of milk. Do not freeze the queso; the sauce turns grainy when thawed.
