Taco night does not need tortillas to feel like taco night. These lettuce wraps spoon smoky, well-spiced ground turkey into crisp butter lettuce cups and finish them the way good tacos deserve — fresh pico, avocado, a cool lime crema and a squeeze of lime over everything. The plate is bright, crunchy and satisfying, and dinner is done in about twenty-five minutes.

Ground turkey has a reputation for blandness that is really a seasoning problem. Browning it properly, blooming the spices in the pan drippings, and finishing with tomato paste and lime gives the filling the deep, savory flavor people expect from taco meat. It follows the same lighter-but-filling logic as our Chicken Cauliflower Fried Rice: familiar comfort, built on lean protein and vegetables.

Set the filling and toppings out family-style and let everyone build their own cups. It is firmly weeknight food from our Healthy and Low-Carb collection — fast, flexible, and the kind of dinner that makes nobody feel they settled for the light option.

Brown the turkey, do not steam it

Ground turkey releases a lot of liquid, and meat that simmers in its own juices never browns or builds flavor. Use a wide skillet over medium-high heat, let the turkey sit undisturbed for the first few minutes so a crust forms, and if the pan floods, tip off the excess liquid and keep cooking. Those browned bits, scraped up when the spices and tomato paste go in, are where the smoky depth comes from.

Choose lettuce that can hold a filling

Butter lettuce is the ideal cup — flexible, cupped and tender — but it tears if overloaded, so spoon modestly and double up leaves for big appetites. Romaine hearts give a crunchier, sturdier boat, and iceberg gives maximum crunch with the least flavor. Whatever you choose, wash and dry the leaves well and keep them cold until serving; a warm, wet leaf wilts the moment hot filling lands in it.

Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 lb ground turkey, 93% lean (450 g)
  • 1 small yellow onion, finely diced (about 100 g)
  • 2 garlic cloves, minced (about 6 g)
  • 1 tablespoon chili powder (8 g)
  • 1 1/2 teaspoons ground cumin (4 g)
  • 1 teaspoon smoked paprika (3 g)
  • 1/2 teaspoon dried oregano (0.5 g)
  • 1 teaspoon kosher salt (6 g)
  • 2 tablespoons tomato paste (32 g)
  • 1/3 cup low-sodium chicken broth or water (80 ml)
  • 1 tablespoon fresh lime juice (15 ml)
  • 12 large butter lettuce leaves (about 2 heads)
  • 1 cup pico de gallo (240 g), store-bought or homemade
  • 1 medium avocado, diced (about 150 g)
  • 1/2 cup plain Greek yogurt (120 g)
  • 1 teaspoon lime zest (2 g)
  • Fresh cilantro and lime wedges, to serve

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Make the lime crema. Stir the Greek yogurt, lime zest and half the lime juice together with a pinch of salt in a small bowl. Set it in the refrigerator to stay cold while you cook — cold crema against hot filling is part of the pleasure here.
  2. Brown the turkey. Heat the olive oil in a large skillet over medium-high heat. Add the turkey and onion and cook for 6 to 7 minutes, breaking the meat into small crumbles and letting it sit undisturbed in stretches so it browns, until no pink remains and the pan juices have mostly cooked off.
  3. Bloom the spices. Stir in the garlic, chili powder, cumin, smoked paprika, oregano and salt and cook for 1 minute, stirring constantly, until fragrant. Add the tomato paste and cook for 1 minute more, stirring it into the meat until it darkens slightly — this step builds the filling's deep, savory base.
  4. Simmer briefly. Pour in the broth, scrape up every browned bit from the pan, and simmer for 2 to 3 minutes until the filling is moist and just saucy, not soupy. Take the pan off the heat and stir in the remaining lime juice. Taste and adjust the salt.
  5. Prep the cups. While the filling rests, arrange the dry, cold lettuce leaves on a platter. If any leaves are small or torn, plan to double them up as you build the wraps.
  6. Build and serve. Spoon the hot turkey filling into each lettuce cup. Top with pico de gallo and diced avocado, drizzle with lime crema, and finish with cilantro. Serve immediately with lime wedges, passing extra filling and toppings at the table.

Storage & reheating

Store the cooked turkey filling separately from the lettuce and toppings for up to 3 days in the refrigerator. Reheat the filling in a skillet or microwave with a splash of water until steaming, then build fresh wraps — assembled wraps go soggy within the hour. The filling freezes well for up to 3 months; thaw overnight in the fridge and reheat as above. Nutrition figures are estimates from standard ingredient data and vary with brands and substitutions.

Frequently asked questions

Can I use ground beef or chicken instead?

Yes. Ground beef (85 to 90% lean) makes a richer filling — drain the fat after browning. Ground chicken works exactly like the turkey. For a meatless version, use finely crumbled extra-firm tofu or a plant-based ground, browned well, and swap the broth for vegetable broth.

How do I keep the lettuce cups from tearing?

Fill them modestly — about 1/4 cup of filling per cup — and eat them promptly. Doubling small leaves, choosing the large outer butter lettuce leaves, or switching to sturdy romaine hearts all help. Keeping the leaves cold and dry until the last moment keeps them at their crispest.

Are these wraps spicy?

As written they are warmly spiced but mild — the chili powder blend and smoked paprika bring flavor more than heat. For real heat, add a minced jalapeno with the onion or finish with hot sauce. For children, the recipe is fine as is with the crema cooling each bite.

What else can I put on top?

Shredded cabbage or carrot for crunch, black beans or corn for a heartier wrap (they add carbs, if you are counting), crumbled cotija or shredded cheddar, pickled red onions, and sliced radishes all belong here. Keep the toppings cold and fresh against the hot filling.

Can I meal-prep these for lunches?

Prep the components, not the wraps: filling in one container, washed dry leaves wrapped in a paper towel in a bag, toppings and crema separate. Assembly takes two minutes at lunch and the leaves stay crisp. The filling also reheats well all week for quick dinners.
