Chicken tenders are the dinner nobody argues with, and the air fryer makes the best homemade version we have found: a shattering golden panko crust, chicken that stays genuinely juicy, and none of the oil, splatter or lingering fry smell of the stovetop method. From breading to plate takes under half an hour.
The crust stays crisp because of two small habits we use across our Air Fryer collection: the tenders are patted dry before breading so the coating grips, and the panko is pressed on firmly and given a light oil spray so it toasts evenly instead of patching. It is the same care that makes our Air Fryer Zucchini Fries with Parmesan crunch.
Serve them with honey mustard, ranch or barbecue sauce, a big salad and whatever fries or vegetables are going. They reheat like a dream, pack into lunchboxes without complaint, and freeze beautifully — which is why we almost always bread a double batch.
Panko, pressed on, is the whole crust
Fine breadcrumbs make a thin, hard shell; panko's larger flakes make a craggy crust that stays crisp. The pressing matters as much as the crumb: roll each tender in the panko, then press gently with your palm so the flakes anchor in the egg wash. A ten-minute rest on the rack before cooking lets the coating hydrate just enough to set, so it fries as one crust instead of shedding in the basket.
Even thickness, even cooking
Tenders vary — some are plump, some are ribbon-thin — and thin ends dry out while thick centers finish. Lay the tenders out before breading and gently press the thickest ones flatter with your palm so the whole batch is close to one thickness. Pull any very small tenders a minute or two early and check the largest piece at 165°F (74°C) before serving the batch.
Ingredients
- 1 1/2 lb chicken tenders (680 g)
- 1/2 cup all-purpose flour (60 g)
- 1 teaspoon kosher salt (6 g), divided
- 1/2 teaspoon black pepper (1.5 g)
- 1 teaspoon smoked paprika (3 g)
- 1/2 teaspoon garlic powder (1.5 g)
- 2 large eggs
- 1 tablespoon milk (15 ml)
- 1 1/2 cups panko breadcrumbs (90 g)
- 1/4 cup finely grated Parmesan (22 g)
- Olive oil spray
- Honey mustard, ranch or barbecue sauce, to serve
Amounts are for the yield below. US customary measures first, grams in brackets for scale users.
Step-by-step instructions
- Season the flour. Pat the chicken tenders very dry with paper towels. In a shallow bowl, stir together the flour, half the salt, the pepper, smoked paprika and garlic powder. Set out a second bowl with the eggs and milk beaten together, and a third with the panko, Parmesan and remaining salt stirred together.
- Bread the tenders. Working with one tender at a time, coat it lightly in the seasoned flour and shake off the excess, dip it fully in the egg wash, then roll it in the panko mixture, pressing the crumbs on firmly with your palm so the crust anchors. Set the breaded tenders on a plate or rack and rest them for 10 minutes so the coating sets.
- Preheat the air fryer. Heat the air fryer to 400°F (200°C) for 3 minutes. Lightly spray the basket with olive oil spray.
- Load in one layer. Arrange the tenders in the basket in a single layer with space between each piece — air needs to circulate for the crust to crisp, so work in two batches rather than crowding. Spray the tops lightly with olive oil spray.
- Air fry until golden. Cook for 6 minutes, then flip each tender carefully, spray the second side lightly, and cook for 5 to 6 minutes more, until the crust is deep golden and crisp and the thickest tender reads 165°F (74°C) on an instant-read thermometer.
- Rest and serve. Rest the tenders for 2 minutes on a rack — not a plate, where steam softens the underside — then serve hot with your dipping sauce of choice and lemon wedges if you like.

Storage & reheating
Leftovers keep for up to 3 days in an airtight container in the refrigerator. Reheat in the air fryer at 375°F (190°C) for 4 to 5 minutes and the crust comes back almost to fresh. Breaded, uncooked tenders freeze well: freeze them solid on a parchment-lined tray, bag for up to 3 months, and air fry from frozen at 375°F (190°C) for 14 to 16 minutes, flipping halfway.
