This is the one-pan dinner we hand to anyone who says weeknight cooking feels like a second job. Chicken thighs are seared skin-side down until the skin is properly crisp, then the whole pan goes into the oven over a bed of halved baby potatoes that roast in the lemony, garlicky pan juices. The potatoes come out crisp at the edges and almost creamy inside, the chicken stays juicy, and there is exactly one pan to wash.
The method borrows the best trick from our Sheet Pan Sausage and Peppers — let the oven and the ingredients' own drippings do the work — but adds a stovetop sear first, because thighs that go into the oven raw never get truly crisp skin in the time the potatoes need. Ten minutes of searing buys the texture that makes this dish, and it earns its place in our Easy Dinners rotation on any night of the week.
Everything on the ingredient list comes from a regular supermarket run, and the pan juices — lemon, garlic, rosemary and chicken drippings — need nothing more than a spoon and a piece of bread to be the best part of the meal. Make it once and it becomes the dinner you cook from memory.
Start the chicken in a cold-ish pan, skin down
Placing the thighs skin-side down in the pan before the full heat builds lets the fat render gradually, so the skin cooks in its own fat and turns evenly crisp instead of shrinking and curling on contact with a ripping-hot surface. Do not move the thighs for the first five minutes — the skin releases on its own once it has crisped, and forcing it earlier tears it. You are listening for the sizzle to quieten slightly; that is the sound of most of the fat having rendered out.
Potatoes go cut-side down, under the chicken's drip line
Halved baby potatoes roast best with their flat cut sides against the hot pan, where they pick up a deep golden crust. Arrange them around and partly under the thighs after the sear, so the lemon juice and rendered chicken fat wash over them as everything roasts. A potato that roasts in plain oil is fine; a potato that roasts in garlicky chicken drippings with lemon is the reason people ask for this recipe.
Ingredients
- 4 bone-in, skin-on chicken thighs (about 900 g)
- 1 1/2 lb baby potatoes (680 g), halved
- 3 tablespoons olive oil (45 ml), divided
- 1 teaspoon kosher salt (6 g), divided
- 1/2 teaspoon black pepper (1.5 g)
- 1 teaspoon smoked paprika (3 g)
- 4 garlic cloves, finely minced (about 12 g)
- 1 lemon, zested and juiced (about 3 tablespoons / 45 ml juice)
- 1 tablespoon chopped fresh rosemary (3 g), or 1 teaspoon dried
- 1 teaspoon Dijon mustard (5 g)
- 1/2 cup low-sodium chicken broth (120 ml)
- 2 tablespoons chopped fresh parsley (8 g), to serve
- Lemon wedges, to serve
Amounts are for the yield below. US customary measures first, grams in brackets for scale users.
Step-by-step instructions
- Heat the oven and season. Heat the oven to 425°F (218°C). Pat the chicken thighs very dry and season the skin with half the salt, the pepper and the smoked paprika. Toss the halved potatoes with 1 tablespoon of the olive oil and the remaining salt.
- Sear the chicken skin-side down. Heat the remaining olive oil in a large oven-safe skillet over medium-high heat. Lay the thighs in skin-side down and cook undisturbed for 6 to 7 minutes, until the skin is deep golden and crisp and releases easily from the pan. Transfer the chicken to a plate, skin-side up.
- Build the potato bed. Tip most of the fat out of the skillet, leaving about 1 tablespoon. Add the potatoes cut-side down in a single layer and cook for 3 minutes without moving them, so the cut sides start to color. Stir in the garlic for the last 30 seconds.
- Add the lemon pan sauce. Whisk the lemon zest, lemon juice, rosemary, Dijon and chicken broth together and pour it around the potatoes — not over the chicken skin, which would soften it. The liquid should sizzle and immediately start picking up the browned bits from the pan.
- Roast everything together. Set the chicken thighs on top of the potatoes, skin-side up. Transfer the skillet to the oven and roast for 22 to 25 minutes, until the potatoes are tender, the juices run clear and the thickest thigh reads 175°F (79°C).
- Rest and serve. Rest the pan for 5 minutes so the juices settle. Scatter with parsley, spoon the lemony pan juices over the potatoes, and serve straight from the skillet with extra lemon wedges at the table.

Storage & reheating
Leftovers keep for up to 3 days in an airtight container in the refrigerator. Reheat in a skillet or a 400°F (200°C) oven for about 12 minutes so the skin and potatoes re-crisp; the microwave softens both. The dish does not freeze well once assembled, because the potatoes turn grainy, but the cooked chicken alone freezes for up to 3 months.
