Every Midwestern potluck has a fluff, and this orange one is ours. It is the kind of recipe that gets passed around on index cards: mandarin oranges and crushed pineapple folded through cottage cheese, orange gelatin and a cloud of whipped topping, with mini marshmallows for good measure. It sounds unlikely. It tastes like a creamsicle grew up and came to dinner.

Fluff salads divide people right up until they try a spoonful. This version is balanced on the brighter side — well-drained fruit, cottage cheese small-curd and fully blended in, and enough chilling time for the flavors to marry. Make it for the cookout and watch the bowl come back empty, with at least one person asking for the recipe.

Drain the fruit like you mean it

The difference between a fluff that sets into soft clouds and one that weeps into soup is almost entirely in the draining. Give the mandarin oranges and pineapple a full fifteen minutes in a colander, and press the pineapple gently with a spoon. That small patience is repaid in texture — the finished salad should mound on a spoon, not pour.

The cottage cheese question

Cottage cheese is the backbone of classic orange fluff, and small-curd, well-stirred into the gelatin, disappears into the mixture — skeptics genuinely cannot find it. If you truly cannot face it, an equal amount of softened cream cheese beaten smooth works instead, though the result is richer and more cheesecake-like.

Ingredients

  • 1 package orange gelatin, 3 oz (85 g)
  • 1 cup boiling water (240 ml)
  • 2 cups small-curd cottage cheese (450 g)
  • 1 can mandarin oranges, 15 oz (425 g), very well drained
  • 1 can crushed pineapple, 20 oz (565 g), very well drained
  • 1 container whipped topping, 8 oz (225 g), thawed
  • 1 1/2 cups mini marshmallows (75 g)
  • 1/2 cup sweetened shredded coconut (40 g), optional

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Dissolve the gelatin. Stir the orange gelatin into the boiling water for about 2 minutes, until completely dissolved with no grains remaining. Let it cool for 15 minutes until just warm — hot gelatin will melt the whipped topping later.
  2. Blend in the cottage cheese. In a large bowl, stir the cottage cheese into the cooled gelatin until evenly combined and the curds are well distributed.
  3. Fold in the fruit. Fold in the well-drained mandarin oranges and crushed pineapple gently, keeping the mandarin segments as whole as you can.
  4. Add the clouds. Fold in the whipped topping until no streaks remain, then fold in the marshmallows and coconut, if using. Folding, rather than stirring, keeps the mixture light.
  5. Chill to set. Cover and refrigerate for at least 2 hours, and up to overnight, until set and the flavors have blended. Serve cold, straight from the bowl.

Storage & reheating

Orange fluff keeps, covered, in the fridge for up to 3 days; the marshmallows soften pleasantly over the first day but the salad may loosen slightly by day three. It does not freeze well — the whipped topping and fruit separate on thawing. For a potluck, transport it in its serving bowl nested in a larger bowl of ice.

Frequently asked questions

Can I make orange fluff the day before?

Yes — in fact it is better made a day ahead, because the gelatin sets fully and the flavors blend. Add a handful of fresh marshmallows on top before serving if you like the look of them plump.

What other flavors of fluff are there?

The template works with almost any fruit and gelatin pairing: strawberry with sliced strawberries, lime with pears, and cherry with cherry pie filling are the classics we see most at potlucks.

Can I use fresh oranges instead of canned mandarins?

Fresh mandarin segments work if they are sweet and you pat them very dry, but canned mandarins are the traditional choice because their tenderness matches the soft set of the salad.
