Some slow cooker recipes ask you to brown, soak and par-cook half the ingredients before the lid even goes on. This is not one of them. Chicken, a ranch-seasoned cream sauce and ten minutes of prep go into the cooker in the morning, and by dinner the chicken shreds at the touch of a fork into a sauce that tastes like you stood over it. It is the kind of recipe that earns its place in a busy household within one making.
The sauce is cream cheese based, loosened with a little chicken broth so it coats rather than clumps, and brightened at the end with fresh herbs and a squeeze of lemon if you like. Ranch seasoning brings garlic, onion and dill in one packet, which is exactly why it works so well here — but read the notes below on salt, because packets vary a lot and an over-salted slow cooker sauce cannot be rescued at the end. For another set-and-forget chicken dinner, see our Slow Cooker White Chicken Chili in the Slow Cooker and Casseroles collection.
Serve it the way your household will actually eat it: spooned over rice or egg noodles, piled onto mashed potatoes, or tucked into toasted rolls with the sauce soaking in. The chicken itself is deliberately plain enough to be flexible, and the leftovers reheat into an excellent sandwich filling the next day.
Add the cream cheese in cubes, and stir late
Cream cheese dropped into a slow cooker in one cold block melts unevenly and can leave pale lumps in the sauce, no matter how long it cooks. Cut it into cubes, scatter them over the chicken, and let them soften on top as the chicken cooks — then stir everything well when you shred the chicken, and the sauce comes together smooth in about a minute. If lumps persist, a few strokes with a whisk in the warm cooker fixes them without any extra equipment.
Ranch packets vary — season in two stages
Homemade and store-bought ranch seasonings differ widely in salt. Add the seasoning as written, but hold back any extra salt until the very end, after the chicken has been shredded and stirred back into the sauce. Slow cooking concentrates flavours as liquid reduces slightly under the lid, and a sauce that tasted balanced at noon can taste salty at five. A final squeeze of lemon or a spoonful of plain Greek yogurt stirred in at serving also lifts a sauce that has gone a little flat, which long-cooked cream sauces often do.
Ingredients
- 2 lb boneless, skinless chicken breasts (900 g), or thighs
- 1 (8 oz) package cream cheese (226 g), cubed
- 2 tablespoons ranch seasoning (about 18 g), homemade or store-bought
- 1 teaspoon garlic powder (3 g)
- 1/2 teaspoon black pepper (1.5 g)
- 1/2 cup low-sodium chicken broth (120 ml)
- 1/2 cup grated Parmesan (45 g)
- 2 tablespoons chopped fresh parsley (8 g), to serve
- 1 teaspoon lemon juice (5 ml), optional, to finish
- Cooked rice, egg noodles or mashed potatoes, to serve
Amounts are for the yield below. US customary measures first, grams in brackets for scale users.
Step-by-step instructions
- Load the slow cooker. Set the chicken in a single layer in a 5 to 6 quart slow cooker. Scatter the cubed cream cheese over the top — do not stir it in yet — and sprinkle the ranch seasoning, garlic powder and black pepper evenly over everything.
- Add the broth around, not over. Pour the chicken broth in around the edges of the chicken rather than over the top, so the seasoning stays on the chicken and cheese instead of washing straight to the bottom of the pot.
- Cook low and slow. Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 2 1/2 hours, until the chicken is very tender and reads 165°F (74°C) at the thickest part. Avoid lifting the lid during cooking — each peek adds about 20 minutes to a low cook.
- Shred the chicken. Lift the chicken onto a board and shred it with two forks into bite-size strands. It should pull apart with almost no resistance; if it resists, it needs another 30 minutes in the pot.
- Stir the sauce smooth. Whisk the melted cream cheese, broth and cooking juices in the cooker until you have a smooth, pourable sauce, then stir in the Parmesan until it melts. Return the shredded chicken and toss it through the sauce until every strand is coated.
- Finish and serve. Stir in the lemon juice if using, taste for salt — remembering the seasoning note above — and scatter with parsley. Serve hot over rice, egg noodles or mashed potatoes, with plenty of sauce spooned over the top.

Storage & reheating
Leftovers keep for up to 3 days in an airtight container in the refrigerator; the sauce thickens as it chills and loosens again on reheating. Reheat gently on the stove or in the microwave with a splash of milk or broth, stirring often — boiling a cream cheese sauce hard can make it grainy. Freeze for up to 2 months, thaw overnight, and whisk well as it reheats. Nutrition figures are estimates from standard ingredient data and vary with brands, ranch seasoning and substitutions, and do not include rice or noodles.
