Taquitos live or die on the roll: tight, seam down, and crisped until the tortilla shatters rather than bends. The air fryer is honestly the best home tool for the job - better than a shallow pan of oil - because the circulating heat crisps the whole cylinder evenly with nothing more than a mist of oil. The photograph shows the full restaurant plate this recipe aims at: five golden taquitos dusted with grated cheese, Mexican rice, refried beans under a blanket of melted cheese, and the cool trio of sour cream, pico de gallo and guacamole in the middle.
The filling is weeknight-realistic: chicken simmered and shredded, or a rotisserie chicken on the busiest days, seasoned with cumin, chili powder and a squeeze of lime so it tastes bright inside its crisp shell. A little shredded cheese inside each roll is not just flavour - it melts and glues the seam shut in the heat. If you like this style of plate, our easy chicken quesadillas scratch the same itch on a flat plane, and everything here sits naturally in our Air Fryer rotation.
Warm tortillas are the whole rolling secret, and it is covered in the notes below - a cold corn tortilla cracks every single time, and a cracked taquito leaks. Get that one step right and the rest is assembly.
Rolling without cracks
Corn tortillas must be warm and pliable before they meet the filling. Wrap a stack of ten in a damp paper towel and microwave for 45 to 60 seconds until steamy and flexible, then keep them wrapped while you work, rolling one at a time. Fill along one edge in a tight line - about 2 tablespoons per tortilla - roll away from you as snugly as the tortilla allows, and set each taquito seam-side down so its own weight holds it closed until the cheese melts and seals it. A toothpick through the seam is cheap insurance for your first batch.
Getting the shattering crust in an air fryer
Three details matter: the rolls go in seam-side down in a single layer with a finger's width between them; each one gets a full mist of oil, especially along the top seam; and the basket is preheated, so the tortillas start crisping on contact rather than drying out while the machine warms. Flip once at the halfway mark. Flour tortillas also work and brown faster and puffier - drop the cook time by a minute and watch the first batch closely.
Ingredients
- 3 cups cooked shredded chicken (420 g)
- 1 teaspoon chili powder (3 g)
- 1 teaspoon ground cumin (3 g)
- 1/2 teaspoon garlic powder (2 g)
- 1/2 teaspoon fine sea salt (3 g)
- 1 tablespoon lime juice (15 ml)
- 1 cup shredded Monterey Jack cheese, divided (115 g)
- 12 corn tortillas (360 g)
- 1 tablespoon neutral oil or oil spray (15 ml)
- 2 cups cooked Mexican rice, for serving (370 g)
- 1 (16 oz) can refried beans, warmed (450 g)
- 1/2 cup pico de gallo (120 g)
- 1/2 cup guacamole (120 g)
- 1/2 cup sour cream (120 g)
- 2 tablespoons crumbled cotija or grated Parmesan, for dusting (15 g)
Amounts are for the yield below. US customary measures first, grams in brackets for scale users.
Step-by-step instructions
- Season the filling. In a bowl, toss the shredded chicken with the chili powder, cumin, garlic powder, salt and lime juice until evenly coated. Fold in half of the Monterey Jack. Taste - the filling should be well seasoned, as the tortilla adds no salt of its own.
- Warm the tortillas. Wrap the tortillas in a damp paper towel and microwave for 45 to 60 seconds until steamy and pliable. Keep them wrapped between rolls so they stay flexible.
- Roll the taquitos. Lay about 2 tablespoons of filling in a line along one edge of a warm tortilla. Roll up tightly and place seam-side down on a plate. Repeat with the remaining tortillas, keeping finished rolls covered with a towel.
- Air fry until crisp. Preheat the air fryer to 400°F (200°C) for 3 minutes. Mist the taquitos all over with oil, set them seam-side down in a single layer with space between, and cook for 8 to 10 minutes, turning once, until deeply golden and crisp all over. Work in two batches if needed.
- Warm the sides. While the taquitos cook, warm the refried beans in a small pan, scatter the remaining Monterey Jack over the top and cover until melted. Reheat the Mexican rice and fluff it with a fork.
- Plate and serve. Arrange five taquitos on a warm platter or divide between plates as pictured: rice and cheese-topped beans alongside, a scoop each of guacamole and sour cream and a spoonful of pico de gallo in the centre, and the hot taquitos dusted with the crumbled cotija. Serve straight away, while the shells still crackle.

Storage & reheating
Cooked taquitos keep in the refrigerator for up to 3 days and reheat best in the air fryer at 375°F (190°C) for 3 to 4 minutes until re-crisped. Uncooked rolled taquitos freeze beautifully: freeze seam-side down on a tray until solid, bag for up to 2 months, and air fry from frozen at 390°F (200°C) for 12 to 14 minutes. The rice and beans keep 4 days refrigerated; the pico and guacamole are best fresh. Nutrition values are estimates and will vary with your chicken and sides.
